Meet Candice: The Edgy Veg

Candice has a blog named The Edgy Veg and a youtube channel too! I just saw her recipe for Vegan Kale "Doritos!" HOLY COW! I can't wait to try them. Her site is fun and light hearted. Just had to share her with you all. You'll find tons of inspiration.

Sushi with Butternut Squash, Basil & Cream Cheese

Butternut, Basil, Cream Cheese & Cashew Sushi

I LOVE SUSHI!!!  There are so many combos and this one can easily set off a brainstorm of ideas. My thoughts for basic good sushi combos are:
  1. Something crunchy.
  2. Something soft.
  3. Something BOLD flavored. (but only use a tiny bit)
  4. Something subtle flavored. (you can use more)
  5. Something colorful.
From there you can add:

Something salty.
Something sour.
Something sweet.
Something bitter.

Always try to

Planning for success.

Honestly, I haven't posted in a long time because I've felt guilty for sliding back into a more meaty way for eating. Belly fat came back, energy down, puffy face, etc etc. Like I mentioned in "my story," I've always enjoyed meat and was raised cooking and baking with animal based ingredients. Doing "what's best" isn't always easy, but I know it's better for me and my family when we are eating (and living) a more plant based life style. So

Persimmon Bread; Green Smoothy

Persimmons are in season so I thought what the heck lets give this a try. It turned out great!

Banana 1 (peeled)
Persimmon 1 (whole minus the stem)
Kale 1 hand full (chopped)
Oats 2 small hand full
Pecans 1 small hand full
Cinnamon a few dashes (to taste)
Ice 5-6 cubes
Almond milk 1 cup

Blend and drink!

Unleavened Bread - Passover Meal

No matter if you celebrate a Passover or not (I don't but I enjoy the meal every year), you will find this tasty flat bread a treat to have! I make a simple passover meal each year that I usually share with my family and a friend or two. The meal consists of Bitter Greens, Unleavened Bread, Red Wine and Lamb. This year I decided to go with a Vegan version and use marinated grilled Portobello mushrooms instead of lamb. We had one of our best friends, Alex and her two boys Colby & Hudson, over to enjoy it with us.

I made this dish for several of my meat eating friends that were coming over for dinner. It was a total hit. I did end up adding a little nutmeg and pumpkin spice to the soup but forgot to mention that in the video.
