Banana Chocolate Chia Pudding



This recipe is really good and makes a great breakfast or desert. It's Raw Vegan, Plant-based and can easily be modified. It tastes like 

chocolate tapioca pudding with a little crunch from the Chia seeds.


I found this recipe this morning on the website http://www.onegreenplanet.org/, a great resource for anyone thinking of going more plant-based or vegan with their food choices. The image you see and the main recipe below are from the website. This recipe is the creation of Sonya O'donnell, check out her food blog Love and Greens as well as her bio on the original recipe post on One Green Plant.


I made some minor modifications below but overall is pretty close to the original recipe. I've also rewritten the recipe in my usual style of ingredient first, then amount (prep or comment); Followed by steps 1, 2 & 3.



Chia Seeds ½ cup (yes the same ones as the Chia Pet)
Almond Milk 1 3/4 cups
Banana 1
Raw Cashews 1 hand full (soaked if you have time)
Raw Cacao Powder 2 Tbs
Salt ¼ tsp
Medjool Dates 3-5 (soaked and pitted)
Vanilla Bean ½ or  ½  tsp vanilla extract
Cinnamon ½ tsp

1 Place the chia seeds in a medium sized mixing bowl.

2 Blend almond milk, banana, hemp seeds, cacao, salt, dates, vanilla and cinnamon in a high speed blender. Blend on high until a chocolate shake consistency is achieved.
3 Add wet ingredients to chia seeds and mix thoroughly. Let stand for at least 20 minutes while chia seeds swell and become gel like.

Eat as soon as set or cover and place in the refrigerator. It will keep cover a few days.
