A "Tech-cation" for Meatlessly :)
Hello everyone! I just wanted to take a quick moment to chime out to my friends and family here at Meatlessly. I haven't posted in awhile. I've been taking a "tech-cation" (technology vacation). I needed to take some time and really focus my attentions on some other important areas of my life. And to really do that it meant

Creamy Tequila Lime "Chicken" over Barley
Hi There everyone! I know it's been awhile sense my last recipe post. I've been working on my 'Summer' body for the last 3 months so that's eaten up most of my usual morning blogging time. I think I've gotten a routine down that will let me do both. So stay tuned for more cooking fun this summer!!! Now on to this yummy recipe.
I first made this years ago, it was a dairy filled, meat filled, white pasta delight and I couldn't wait to make it again! Well I

Welcome New Guest Blogger - Sean Young!
Sean is the newest meatless blogger to join in the recipe sharing here at Meatlessly Mouthwatering! He and his family have been rapidly making the switch to eating plant strong. This is really exciting for me because Sean is a great cook and has so many meat dishes that he cooked, is so creative, that I knew once he started going meatless he would be creating some inspiring, meatlessly mouthwatering food. He has not disappointed! His wife (my wonderful sister in law) Jody is also creating some great food (which I just got to sample last night, yummy) so I'm sure she will have plenty to share too!!! So welcome Sean (and Jody), share away and feel free to post as often as you like!
(if any one else is interested in sharing your meatlessly mouthwatering recipes please contact me and I'll help you get started. It's easy and fun to share great food that's good for you too!)

Crystal Bernard - Her Recipes for Healthy Changes
Crystals four cute kids :-) |
Today I'm not going to share a recipe for creating a meatlessly mouthwatering dish. Instead, with her permission, I am going to share with you an e-mail that I received the other day from my amazing cousin Crystal. It's her inspiring story of great steps she's made recently to improve the health and lives of herself, her family and in a way the community around her. You might say it's her recipes for healthy changes. As you read her story I know you will be inspired to make even more healthy changes in your life!

Unleavened Bread - Passover Meal
No matter if you celebrate a Passover or not (I don't but I enjoy the meal every year), you will find this tasty flat bread a treat to have! I make a simple passover meal each year that I usually share with my family and a friend or two. The meal consists of Bitter Greens, Unleavened Bread, Red Wine and Lamb. This year I decided to go with a Vegan version and use marinated grilled Portobello mushrooms instead of lamb. We had one of our best friends, Alex and her two boys Colby & Hudson, over to enjoy it with us.
This first video is for the Unleavened Bread. Enjoy!

Carrot Ginger Soup - My First YouTube Video!
So I made my first cooking video at last!! I hope to make these more often. So please check it out, share it and let me know what you think.
I made this dish for several of my meat eating friends that were coming over for dinner. It was a total hit. I did end up adding a little nutmeg and pumpkin spice to the soup but forgot to mention that in the video.

This week's menu... (Something New @ Meatlessly)
This Week's Menu ... Is a new feature at Meatlessly Mouthwatering and here's how it's going to help you!
Many of my readers have contacted me privately, one way or another, and asked for help with either going plant based or ideas for meals, etc. It can be hard at times figuring it all out. Also, sometimes you don't even know where to look or you've exhausted all your usual 'go to' sites.
My wife Michelle, and I understand. We want to help as many people as possible with these challenges and help you succeed in your goals of eating more plant based meals. You must understand,

Squash, Chickpea & Red Lentil Stew
So this week I finally got to try a recipe that one of my coworkers at the Hospital Lab had given to me. She's not Vegetarian, Vegan or plant-based but, she knows that I am. And she was just going on about how good this stew was. So, whenever a 'meat-eater' gives me a plant-based recipe and they are excited about it I just

Lemon Cashew Cream Sauce:The Wishy Washy Vegan Kid!
This is my 10 year old daughter, and I'm so proud of her for so many reasons. But today I was so happy to see that when I had come home from work today she had made her very first Lemon Cashew Cream Sauce to serve over Gnocchi! So seeing as this is her's, instead of posting the recipe here on "Meatlessly" I will share the link to her blog (monitored and co-authored by mom ;-) ) where she can tell you all about it. (just click the linked words "The Wishy Washy Vegan Kid!" below)
Oh one note: I'd suggest thinning the sauce down a bit with some of the hot pasta water, as the recipe comes out a little thick. Most of this is made in the blender so that should make it really easy :-)

Steve The Vegan Meat Eater! - How the heck did this happen?
"That's right, I'm a Vegan meat eater!"
And this is a story of why this meat eater has now chosen to go Plant-based and Vegan. I hope you will enjoy it, find it motivating, and share it with others.
All my life I've loved to cook and eating all kinds of food including meat, dairy and eggs.
For friends and family that really know me the idea of me giving up Meat, Dairy and Eggs, seems unbelievable. I was the kid that got that huge mood swing, hungry look in his eyes if he didn't have his "protein." Not to say that I
